My love for the Play Arts Batman figure has me wanting to read past TPB's that include art with him sporting the ominous, scary long, pointy-eared gear.

Any Batman story by Sam Keith has those long pointy ears you're looking for, but the stories aren't always... recommendable.
The Elseworlds stories from the Red Rain series (vampire Batman) also has the long ears if I remember correctly. Any Batman book drawn by Kelly Jones should have that look, and I tend to like the stories in them also.

The Tim Sale Batman books had the long eared look as well, The Long Halloween and Dark Victory most notably. Here's a quick peek at the look from the DCD B&W series of statues.

"Batman: The Cult" is a good bet.
A bunch of artists have drawn him with pointy ears over the years. I prefer it when they're not too long (Keith/Jones), and I can't vouch for any of the titles mentioned above other than Dark Victory/Long Halloween. I'd say anything by Norm Breyfogle, Alex Ross, Marshall Rogers and Bill Sienkiewicz's (in Morrison's Arkham Asylum tpb) would fit what you're looking for.

Someone mentioned THE CULT - which makes sense... Bernie Wrightson was one of the first LONG long eared BATMAN images I remember, from his appearance in the original SWAMP THING run.
When it comes to Batman, I either like him with really short pointy ears or long. My favorite versions are the Jim lee Hush style, the Justice Alex Ross or the scary, long eared type much like the Arkham City version.
To me Batman should be a muscular guy, whose size is accentuated by the armored suit. I really like the suit to have a somewhat armored look, without looking like a Knight.
Again, this is probably why I'm digging the Arkham Play Arts figure so much, as he has the long ears, the hint of armor on the boots and gauntlets and he's vicious looking.
